Chocolate Chili

Ingredients:

  • 1 tablespoon olive oil
  • 4 clove garlic, minced
  • 1 onion, finely chopped
  • 1 large green bell pepper, cut into 1/4-inch dice
  • 2 15-ounce diced tomatoes
  • 2 15-ounce cans black beans, drained and rinsed
  • 5 cups broth
  • 2 tablespoons ground cumin
  • 1 tablespoon chili powder
  • 1 teaspoon unsweetened cocoa powder
  • 1 teaspoon salt
  • Dash liquid smoke, optional
  • 1 1/2 ounces bittersweet chocolate

Directions:

In a stockpot, over medium heat, cook the oil, garlic, onion, and green pepper until slightly softened, stirring occasionally, about 5 minutes. Add the tomatoes, beans, broth, cumin, chili powder, cocoa powder, liquid smoke, and salt. Bring to a boil over high heat. Reduce heat to low and simmer, stirring occasionally, until thickened, about 30 minutes. Before serving, stir in the chocolate until melted.

Serves 4 to 6.
