Oreo Cheesecake

Ingredients:
- 2 cups Oreo cookie crumbs (about 30 cookies)
- 6 tablespoons melted butter
- 32 ounces cream cheese, at room temperature
- 1 cup sugar
- 5 large egg, at room temperature
- 1/4 teaspoon salt
- 2 teaspoons vanilla
- 8 ounces sour cream, at room temperature
- 15 Oreo cookies, coarsely chopped for the batter
- 5 Oreo cookies, coarsely chopped for the top of cheesecake
Directions:
Mix melted butter with Oreo crumbs and press in the bottom of a greased 9 inch springform pan. Cover bottom and 1/2 inch up the sides with crumbs.
In a large bowl, beat cream cheese until very smooth. Keep mixer on a low setting during the mixing and beating process. Add the sugar gradually and continue beating cream cheese until mixed through. Add the eggs one at a time and continue to beat until blended. Mix in the vanilla, salt, and sour cream. Turn off the mixer and gently stir in the 15 coarsely chopped Oreo cookies with a spoon. Pour mixture into springform pan; top with the 5 remaining coarsely chopped cookies.
Bake in a preheated oven at 350 degrees for 15 minutes, then lower the temperature to 200 degree and continue to cook for 2 hours or until cheesecake is almost set (it will still be jiggly in the middle). Run a knife around the edge of the cheesecake pan. Turn the oven off and leave the cheesecake in the oven for another 2 hours. Then chill in the refrigerator overnight.
