Peanut Butter Cup Cookies

Ingredients:

  • 1 3/4 cup flour
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup margarine
  • 2 cups peanut butter
  • 2 tablespoons milk
  • 1 teaspoon vanilla
  • 1 egg
  • 1 bag miniature Peanut Butter Cups (about 36 candies)

Directions:

Combine all ingredients to form a soft dough. Shape dough into balls using a rounded teaspoon of dough. Roll balls in additional sugar, and then place into miniature muffin tin. Bake at 375 degrees for 10 to 12 minutes. Remove from the oven and immediately press a peanut butter cup into each cookie.

This is my version of the traditional Peanut Butter Kiss Cookie or the Peanut Blossom. To make the traditional cookie, roll the dough into balls, roll in sugar, bake on an ungreased cookie sheet, and then press a Hershey kiss into each cookie.
