Coconut Pineapple Cake

Ingredients:

Cake:

  • 2 eggs
  • 2 cups sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 can (20 ounces) crushed pineapple, undrained
  • 1/2 cup chopped walnuts

Frosting:

  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup butter, softened
  • 2 cups powdered sugar
  • 1/2 cup flaked coconut

Directions:

In a large mixing bowl, beat the eggs, sugar and vanilla until fluffy. Combine the flour, baking soda, baking powder and salt; add to the egg mixture alternately with the pineapple. Stir in the walnuts.

Pour into a greases 13×9 inch baking pan. Bake at 350 degrees for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.

Frosting:

In a small bowl, beat the cream cheese, butter, and powdered sugar until smooth. Frost the cake and then sprinkle with coconut. Store in the refrigerator.
