Wacky Cake with Peanut Butter Icing

Wacky Cake Recipe

Peanut Butter Icing Recipe

My best friend gave me this Wacky Cake with Peanut Butter Icing recipe. It’s a really old recipe that her grandmother usedWacky Cake with Peanut Butter Icing to make. Her grandmother told her that the recipe originated during the depression because people didn’t have a lot of extra money, so they used vinegar to replace the eggs in the recipe, vegetable oil is used instead of butter, and water replaced the milk.
This is possibly the easiest cake to mix together. All the ingredients get mixed together in one bowl with an electric mixer for 3 minutes. I added a dash of salt, just to enhance the chocolate flavor. The batter is then poured into an ungreased 13×9 cake pan and baked in a 350 degree oven. The recipe suggested baking the cake for 40 minutes, but I checked the cake after 30 minutes, and it was definitely done. >> Read more

Warm Chocolate Souffles

Warm Chocolate Souffle Recipe

I recently bought the New Mayo Clinic Cookbook, which I really enjoy, especially this recipe for warm chocolate souffles. The cake goes by many names, chocolate lava cake, Warm Chocolate Soufflesmolten chocolate cake, flourless chocolate cake, even little hot chocolate cakes, but this recipe is different because it’s actually good for you. The Mayo Clinic replaced a lot of the “bad” ingredients (butter, egg yolks) with healthy alternatives (honey, egg whites) to create a chocolate delight that you can enjoy without the guilt.

The recipe has a lot of ingredients and steps, but it’s not as difficult as it appears. First I combined the cocoa powder with hot water. I had to add probably twice as much water to create a paste. After I finally got the cocoa mixed together, I set it aside and melted some butter and oil in a saucepan. When the butter melted, I added flour, ground pecans, and cinnamon. I mixed everything together for a minute and then added the brown sugar, honey and salt. At that point, the mixture sort of turned into a thick paste, almost like caramel. I stirred in the milk, which took a minute to work into a sauce, but it thickened up pretty quickly after I got it mixed together, and then I added the cocoa pasta and turned of the heat. >> Read more

Oatmeal Cake with Chocolate Frosting

Oatmeal Cake Recipe
Chocolate Frosting Recipe

Oatmeal Cake with Chocolate FrostingI was in the mood for something really rich and chocolaty, but chocolate cake and brownies weren’t quite what I had in mind. I wanted something a little different. I looked through a 1972 Pennsylvania State Grange Cookbook grange cookbook a got recently, and found a recipe for an oatmeal cake. The cake was supposed to be covered with a coconut topping, but I thought if I replaced that with a chocolate frosting, it would satisfy my craving. >> Read more
