Five St. Patrick’s Day Desserts
Chocolate Guinness Cake Recipe
Seth grew up in a very tiny town with a huge Irish heritage. This past weekend, they had their 5th Annual St. Patrick’s Day parade. It was a little late, but even Bill Clinton showed up, so it was a pretty big event. Of course, there is always a ton of food, and I made a variety of desserts. Only one of them was actually a real Irish desserts, but they were all appropriate for the occasion. I made traditional Irish soda bread, with raisins and caraway seeds. It’s a really unique flavor, which both Seth and I enjoyed. The bread can be a little on the dry side, especially if it sets for more than a day, but add a little butter and it was excellent. >> As for the other desserts, I made mini Irish cream cheesecakes and Irish cream brownies. The cheesecakes were decent, although when I took them out of the oven, they collapsed. The brownies had a chance to be great, but for some reason, the bottom turned out to be a little mushy. Everyone still really enjoyed them, but I think I will work a little on that recipe. I also made Blarney Stone bars, which is just basically a thin oatmeal cake with toffee bits and pecans in it. I topped it with a little green frosting and sprinkles for decoration. The bars, although I thought they would be more like cookies and less like cake, were a bit on the sweet side, but very good. The most complimented dessert was definitely the Chocolate Guinness Cake. It’s similar to the double chocolate cake I made a few weeks ago, but the coffee is replaced with Guinness. The cake is delicious and very moist. I topped it with a little espresso ganache instead of frosting.
