Pepper Steak Stir Fry except with Chicken
Seth’s sister gave me this recipe for pepper steak stir fry that I really wanted to try. I only had chicken, but I figured that would work in place of the steak.
In a ziplock bag, I mixed together vegetable oil, corn starch, soy sauce, and pepper. I left the salt out because I thought the soy sauce would make it salty enough. Once everything was mixed, I added sliced chicken breast and put it in the refrigerator to marinate while I chopped all the vegetables. As with all stir fries, it’s importable to have all the ingredients ready to go. I cut fresh tomatoes into wedges, sliced both a green and a red pepper, diced an onion, and minced a little garlic. I didn’t have any ginger, but would have definitely added it to the mix. Since I was using chicken instead of beef, I made the sauce my combining chicken broth, corn starch, soy sauce, and sugar. >> Once all the veggies were ready, and the chicken had been in the refrigerator for about half an hour, I heated a wok over medium high heat, added about a tablespoon of oil, and then added the onion and garlic. I stir fried that for a minute before adding the chicken mixture, marinade included. It took a couple minutes for the chicken to cook though, and then I removed everything from the wok onto a clean plate. I added about another tablespoon of oil to the wok, added the peppers, and stir fried them for a couple minutes before adding the tomato wedges. After adding the tomatoes, I stirred in the chicken broth mixture. Once that mixture started to bubble and thicken, I added the chicken and onion mixture back to the wok. Once everything was heated though, about 2 or 3 minutes, I served the stir fry over brown rice.
I really loved this dish. A lot of stir fries I’ve made call for orange juice in the sauce, which sometimes makes the dish really sweet without adding a lot of flavor. The chicken broth added a ton of flavor, plus the tomatoes cooked down a bit to add a natural sweetness. I also liked the simplicity of the vegetables – onions, peppers, and tomatoes. Simple, but really fresh and full of flavor. I’m sure this is a great with steak as well, but I enjoyed the chicken. Either way, it’s a fantastic stir fry, and I have to thank Seth’s sister for the recipe!
