Wacky Cake with Peanut Butter Icing
My best friend gave me this Wacky Cake with Peanut Butter Icing recipe. It’s a really old recipe that her grandmother used
to make. Her grandmother told her that the recipe originated during the depression because people didn’t have a lot of extra money, so they used vinegar to replace the eggs in the recipe, vegetable oil is used instead of butter, and water replaced the milk.
This is possibly the easiest cake to mix together. All the ingredients get mixed together in one bowl with an electric mixer for 3 minutes. I added a dash of salt, just to enhance the chocolate flavor. The batter is then poured into an ungreased 13×9 cake pan and baked in a 350 degree oven. The recipe suggested baking the cake for 40 minutes, but I checked the cake after 30 minutes, and it was definitely done. >>
As the cake cooled, I started on the peanut butter icing. I mixed powdered sugar, cream cheese, butter, peanut butter, milk, and vanilla in a large bowl with an electric mixer until light and smooth. After tasting the icing, I thought it needed a lot more peanut butter. I ended up adding about a cup of peanut butter, which is more than twice as much as the recipe called for. The peanut butter didn’t overwhelm the icing, even with the extra I added. It just made a wonderful creamy icing with a lot of flavor. The recipe makes a lot of icing too, so be really generous when icing the cake.
I honestly didn’t know what to expect from a cake recipe with no eggs in it. After I tasted it though, I will say without a doubt it was the best chocolate cake I have ever had. It was rich and chocolaty, without being bitter, and was incredibly moist. The icing was literally just the icing on the cake, because I could have eaten the cake by itself. Not to say that icing wasn’t good, because I love peanut butter and nothing it better than peanut butter and chocolate, but the cake was unbelievably good. The peanut butter icing was a nice compliment to the cake though. It was very thick and creamy, which paired well with the dense, moist cake. Together, it was an absolutely delicious cake. I can’t wait to make it again!
