Blueberry Delight
If I had to pick my favorite dessert not in the chocolate family, I would definitely choose Blueberry Delight. It’s an amazing dessert that is sweet, tart, and absolutely delicious. My parents live near a blueberry farm, and every summer we used to go pick fresh blueberries to make this wonderful dessert. It can be made with other fresh berries, or even peaches, but blueberries are the best in my opinion. It can only be made with fresh fruit, so while blueberries are in season, we make this dessert a lot!
The dessert is layered, and it begins with a graham cracker crust. I usually make a 13×9 pan, but the recipe can be scaled down to the 9 inch prepared crusted that can be bought in the grocery store. For the larger pan, I crush a pack and a half of graham crackers (15 sheets), which turns out to be about 1 1/2 cups crushed. I mix the crushed graham crackers with a half stick of melted butter and press it into the pan using a piece of waxed paper. Sometimes I bake the crust for 8 minutes in a 350 degree oven and other times I don’t bother. It’s usually hot in the summer, and I don’t want to heat up the oven. The dessert is fine both ways.>>
The next layer is sweetened cream cheese. I beat cream cheese, milk, and sugar together until it’s smooth and then fold in half a container of Cool Whip. The mixture is then spread (carefully!) on top of the graham cracker crust. I top the sweetened cream cheese with the blueberries. The recipe calls for 4 cups, but I just make sure there is a single layer of blueberries covering the cream cheese. I have never measured how much that actually is.
Pudding is the next layer of the dessert, and is simply instant pudding prepared according to the package. I cut down on the milk to make the pudding a little thicker. The pudding I buy calls for 2 cups of milk per package. I use two packages and use about 3 1/4 cups milk. I also let the pudding set up for 5 minutes before pouring it over the blueberries. I then refrigerate the whole thing for at least 30 minutes to let the pudding firm up.
The final layer of the dessert it the remaining Cool Whip. I spread this over the pudding, again, carefully so the layers aren’t blended together. I garnish the dessert with a few nice blueberries and serve.
