Key Lime Pie with Marshmallow Topping
Seth and I recently ate at a restaurant that served Key Lime Pie for dessert. This is no surprise, considering we are in Key West, but this Key Lime Pie had a marshmallow topping. I’ve had a lot of Key Lime Pie with everything from meringue to chocolate to raspberries on top, but never
marshmallow. Seth said it was the best Key Lime Pie ever and insisted I figure out how to imitate the marshmallow topping. This was a bit tricky, but I think I finally found a pretty good solution.
First the Key Lime Pie, which I think has to be the easiest pie ever, except maybe a pudding pie. Beat together sweetened condensed milk, egg yolks, and Key Lime juice until it’s smooth and pour into a graham cracker crust. I also added the zest of one lime to give it a fresh taste. Bake the pie for 15 minutes and then chill in the refrigerator for a couple hours. >>
Compared to the pie, the marshmallow topping is a bit of a challenge. Over a double boiler, I used a hand mixer to beat egg whites, sugar, water, and corn syrup. The recipe called for 1 1/2 cups of sugar, but I only used a half cup and that was definitely enough sugar. I beat the mixture for about 10 minutes before it reached the “stiff peaks” consistency (when you pull the beaters out of the mixture, it will stand in peaks
on the beater ends and the mixture won’t run together). I then removed the pan from the heat and stirred in marshmallows and vanilla extract until they melted. The recipe called for a cup of mini marshmallows, but I used about 10 regular sized marshmallows. I suggest cutting them up though because it will make them a lot easier to melt.
The Key Lime Pie turned out great. It was sweet, sour, tangy and creamy, and one of the better Key Lime Pie’s I’ve had, if I do say so myself. I honestly didn’t care for the marshmallow topping on the pie, because I think it made it too sweet. Seth on the other hand, had equal parts pie and marshmallow and thought it was the best thing ever. I do think the marshmallow icing would be great on chocolate cupcakes though. It’s a very sweet and gooey icing that kids would absolutely love, including Seth. I just didnt think it went with the pie.
